Basics Of Yogurt Production

Yogurt production process sometimes looks ambigious and  difficult.
This write up simplify the step to the barest understandable form.
Before yogurt can be produced, the major backbone/ingredient must be ready.
The major ingredient is milk either cow milk, goat milk, buffalo milk etc. Also whole milk, skimmed milk, low - fat milk etc.
I personally categorised the types of milk to direct and indirect,
The direct include the milk from the producers(female mammary animals) like
1.Goat milk(The best kind of milk)
2.Cow Milk(Most Popular Milk)
3.Buffalo
4.Human milk(Rarely Used)
5.Donkey milk

The indirect type of milk is particularly the milk that has been reduced in content(fat,fibre etc)
They Include:
1.Whole milk
2.Skimmed milk
3.Low-fat milk

Additionally, to perfect the production of yogurt the product has to be fermented, and to hasten fermentation a fermentation culture need to be prepared called starter culture.
This procedure was carried out during the production of 500g yogurt;
 2 liters of the desired/required amount of milk was measured into in a clean container, and was pasteurized at temperature of 85 degree Celsius for 1 minute then cooling  below 40-45 degree Celsius was  allowed
Also this procedure was carried out for production of 500g yogurt:
2 liters of milk was measured into a pot and was pasteurized 85degree Celsius for 1minute, it was then homogenized so as to make it smoother with the help of homogenizer, after pasteurization and homogenizing the milk was allowed to cool to 40-45 degree Celsius, then 3mils (2%) of starter culture (fermentation culture) was added to the content and were mixed. Then it was incubated in a proven chamber for 7 to 8 hours so as to produce yogurt characteristics flavor, finally the product was stirred and the desired (strawberry) flavor was added.
